Not all movements are planned out, though. It’s like a flinch. It’s just a reaction you have. Kind of like fighting. Buffy doesn’t know what they’re going to do, but she reacts to whatever they do, so they can’t anticipate her if she doesn’t have reactions planned.
I was actually thinking about this the other day in the shower, of all places. What if the demons could only read the minds of others of their kind? This would explain how they could communicate with each other, and not hear Buffy’s thoughts. So when Buffy gets this power, she can only hear the thoughts of others of HER kind, aka humans. This could be another explanation for why she can’t read Angel’s mind.
