It is possible that the hard drive wasn’t affected, and if it was, Jenny probably had back up disks. (She was a computer teacher after all!)

Thanks to Michele for this - What Angel knocks off the desk and burns is the monitor for Jenny’s computer, not the computer itself.

That was her school computer. She’d clearly have had a computer at home too. Angel didn’t touch that.

Why would Willow have gone through Jenny’s home computer? I can understand going through her school computer for teacher purposes but that seems a little invasive, even if she is dead. It was probably the moniter that got destroyed and not the computer itself.

Also, why would Angelus destroy the computer monitor instead of the CPU?? He can’t be that computer illiterate that he thinks that Jenny’s files were in the monitor??

Well, he says he couldn’t belive how much the world had changed since he became a vampire, maybe he didn’t know about computers. In Lie To Me he goes to Willow for computer research. Besides, his plan was to kill Jenny so he maybe thought he wouldn’t need to destroy the computer. She was the only one to know about the translation. I think he destroyed the moniter just to freak her out—which worked.
